Gluten Strengthening & Gas Retention

GEBAKE Structura is a specialized baking enzyme formulation combining Glucose Oxidase and Hemicellulase, designed to strengthen dough structure and enhance gas retention during fermentation and baking. Glucose Oxidase improves dough strength by oxidizing glucose to gluconic acid and hydrogen peroxide, forming stronger disulfide bonds in gluten proteins, thereby reinforcing the gluten network. Hemicellulase breaks down hemicellulosic components (mainly arabinoxylans), improving dough extensibility and machinability. This synergy provides superior loaf volume, improved crumb structure, and enhanced dough handling properties, ideal for industrial and artisanal baking applications.
